Summer is definitely over, even though it’s still not quite as cool as we might like here in Texas. If you’re missing the flavors of summer, this recipe delivers with the comfort and ease of a casserole!



Simple BBQ Chicken Casserole

Prep time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Serves 6-8



  • 3 cups of cooked quinoa 
  • 2 cups of shredded Mexican style cheese
  • 2 cups of shredded chicken
  • 1 small purple onion, chopped
  • 1 can black beans, drained
  • 1 can kernel sweet corn, drained
  • 1 ¼ cups of BBQ sauce of your choice
  • Optional garnish with BBQ, purple onion, and/or cilantro



  1. Preheat Oven 375 degrees
  2. In a large bowl combine quinoa, 1 ½ c cheese, black beans, corn, purple onion,  chicken, and BBQ sauce until mixed completely.
  3. Transfer to casserole dish
  4. Sprinkle the remaining cheese on top
  5. Place in oven for 15-20 minutes until cheese has melted and casserole has warmed through
  6. Remove from oven and you can choose to garnish with items of choice
