It’s cold!  Isn’t that enough reason to have soup? Y’all – we don’t really do cold here in central Texas. So last weekend, when it was 18 degrees outside, I was not about to do anything that required a whole lot of time spent away from my couch/blankie situation. This soup was easy to throw together and when it was done – it did it’s job, and warmed us up from the inside out! Winter is over for us (it was a long weekend, y’all) but I know it’s cold elsewhere, so I thought I’d share this awesome recipe! 

Easy Crockpot Taco Soup
Prep time: 5 Minutes
Cook Time: 6 hours on Low
Total Time 6 hours and 5 mins:
Serves 6-8


Ingredients

  • 1 C Salsa
  • 1 (15.5oz) can Black Beans
  • 1 (15oz) can Whole Kernel Corn
  • 1 (14.5oz) can diced petite tomatoes
  • 3 T Taco Seasoning ( See my Homemade Taco Seasoning Recipe)
  • 2 C Chicken Broth
  • 1 pound skinless boneless chicken (Breast or Thighs)
  • Optional Ingredients: Cilantro, Avocado, Shredded Cheese, Sour Cream, Tortilla Chips, and Green Onions

Instructions

  1. Salt and pepper chicken on both sides
  2. Place salsa, black beans, corn, taco seasoning ,chicken broth into the crock pot.
  3. Then place salt and pepper chicken into the crockpot Set Crockpot on low for 6 hours
  4. After the Chicken is done remove from soup.  You can eith chop up or shred chicken
  5. Add Chicken back to Soup and serve with (or without!) optional ingredients
