Parmesan Rosemary Potato Stacks

Ingredients

1/4 cup unsalted butter, melted
1 tablespoon fresh rosemary
1 teaspoon sea salt
Black Pepper
4 small white or yukon gold potatoes sliced into 2mm slices (I recommend using a mandolin.)
1/4 cup shredded Parmesan cheese

Directions

  1. Preheat oven to 375°F
  2. Melt butter, and stir in the rosemary, salt, and black pepper.
  3. Layer potato slices into a greased muffin tin, brushing lightly with butter between each layer.
  4. Sprinkle the tops of each stack with freshly-grated Parmesan cheese.
  5. Bake for 45-55 minutes, until potatoes are cooked through.

Herbed Sweet Potato Stacks (Healthier Version)

Ingredients


2 Sweet Potatoes sliced into 2 mm slices (I recommend using a mandoline)
2 tablespoons fresh thyme, chopped
2 tablespoons fresh rosemary, chopped
2 tablespoons oregano, chopped
2 tablespoons sage, chopped
2 tablespoons tarragon, chopped
salt and pepper
1/2 cup Parmesan cheese

Directions

  1. Preheat oven to 375°F.
  2. Melt coconut oil in the microwave.
  3. Layer sweet potatoes slices in the bottom of a muffin tin, brushing with coconut oil, and sprinkling with herbs, salt and pepper between each layer.
  4. Sprinkle the tops of each stack with freshly-grated Parmesan cheese.
  5. Bake for 45-60 minutes, until potatoes are cooked through.

Cheesy Jalapeno Bacon Cornbread

Ingredients
1 stick unsalted butter, cut into chunks
1 cup creamed corn
¾ cup buttermilk
3 large eggs, beaten
1 1/2  cups shredded cheddar cheese
½ cup pickled jalapenos, chopped
1 ½ cup cornmeal
2 tablespoon granulated sugar
1 ½ teaspoon baking soda
1 ½ teaspoon sea salt
1 teaspoon black pepper

Directions

  1. Preheat oven to 375°F
  2. In a 10 inch cast iron skillet, cook the bacon over medium heat, turning occasionally, until crispy.  Once done, remove bacon from skillet, and leave the bacon fat in skillet. When bacon has cooled, crumble.
  3. Add butter to the hot bacon fat to melt, then pour it into a large bowl and let cool.
  4. Stir in cream corn into the melted fats, then add buttermilk, eggs, cheese, jalapenos, and crumbled bacon.
  5. In a separate bowl, combine cornmeal, sugar, baking soda, salt, and pepper.  Add the wet ingredients to the dry ingredients and stir until incorporated.
  6. Pour batter into the skillet and bake until the top is lightly browned and center is set, 30-35 minutes.
