Y’all, I’m way too excited about this post.  Banana Sushi Rolls!  When I was doing the shopping for this, I was like a kid in the candy store – I wanted to do ALL THE OPTIONS – but I had to stop myself. My 16 year old daughter says I’m “a little extra” – and hey, when it comes to cooking and baking, I can’t deny that. 

This makes a great after school snack, or even breakfast if you want to be mommy-of-the-year – you can do this a bunch of ways but in order to not be quite so “extra”, I kept it to just two for now – but you do you and be as extra as you can be! Banana-Nutella Sushi Rolls

Servings 2

Ingredients

  • 2 flour tortillas 
  • 2 bananas
  •  4 tablespoons of Nutella

Instructions

  1. Microwave tortillas on paper towel for 10-15 seconds to soften
  2. Microwave Nutella for 10-15 seconds to make sure it is spreadable
  3. Spread each tortilla with 2 tablespoons Nutella
  4. Peel banana and place the banana on top of your Nutella coating
  5. Roll tortillas tightly around the banana
  6. When done rolling, place in fridge for about 15-20 minutes so it can set or Freezer for 5-10 mins.
  7. Slice into half inch pieces like sushi

Making this was really fun – If you are a planner like me, then this type of snack can be prepared overnight and ready for you to slice the next day, just roll it up and wrap with plastic wrap or foil, and slice it when you’re ready to eat it. Don’t like Nutella or don’t have any? You can use peanut butter or any other nut butter – or hell, you can use cookie butter! (You can thank me later) If you want to really take “extra” to the next level, you can add coconut flakes or rice crispies or even crushed potato chips to the inside before you roll it up! Just remember, less is more – you don’t want to tear the tortilla or make it look weird and lumpy.

 

 

Crunchy Banana-Peanut Butter Sushi Rolls

Servings 2

Ingredients

  • 2 bananas
  • 4 tablespoons of peanut butter
  • 1-1.5 cups rice cereal

 

Instructions

  1. Peel the bananas
  2. Microwave peanut butter for 5-10 seconds to make sure it is spreadable
  3. Spread each banana with peanut butter
  4. Roll the peanut butter coated banana into the rice cereal, until all coated
  5. When done rolling, place in fridge for about 15-20 minutes so it can set or freezer for 5-10 mins.
  6. Slice into half inch pieces like sushi

Chef Jocelyn Notes:

This recipe can get real stick, real quick. Get the kids involved, they don’t mind being sticky! If you want to try to stay semi-clean, just touch the ends of the bananas to stay clean. Like with the other recipe, feel free to mix up the nut butters and topping to whatever floats your boat!
